Gameday Cauliflower Dip


Recipe compliments of First Alternative Co-op in Corvallis

 

Gameday Cauliflower Dip
1 head cauliflower, cut into bite-sized pieces
6-8 strips bacon
3 green onions, sliced
8 oz. mushrooms, sliced
10-12 asparagus spears, sliced (optional)
½ cup mayonnaise
½ cup sour cream
2 cups cheddar cheese

Preheat oven to 350°F. Cook bacon in a skillet, until crispy. Drain on paper towels. Discard grease. In the same skillet, sauté cauliflower, green onion, mushrooms, pepper and asparagus for 6-8 minutes, adding ½ cup water to steam veggies; drain. In a large bowl combine sour cream, mayo, cheese and ½ of the crumbled bacon. Add cauliflower mixture and stir well. Place in 9×13 baking dish and sprinkle remaining bacon over top. Bake 10-15 minutes or until cheese is melted. Serve with tortilla chips and hot sauce.
